Lazy AF Chik’n Alfredo (gluten free)

Sometimes you just crave the smooth rich Italian classic- Chick’n Alfredo, but sometimes you’re lazy AF.
I wouldn’t call this meal “healthy” by any means, but veganizing this classic dish does make it guilt free. I added garlic sautéed arugula to balance it a bit.

For garlic sautéed arugula– put olive oil in a pan on medium/low heat, add minced garlic & cook about 2 minutes (fragrant but not browned), add a heaping amount of arugula (it shrinks down to nothing like spinach) & cook for 2-3 minutes. No salt needed.
