Last summer we had some quinoa salad with Trader Joe’s ‘Sweet&Spicy Mango vinaigrette’ at Christine’s house (she’s the TJ queen) & have been thinking about it ever since. You can FINALLY get the dressing again, so I knew I had to post a recipe with it. So simple & stays good for lunches.
- Cook one cup quinoa, let cool
- Dice 1/4 of each pepper
- Finely Chop 1/4 of an onion
- Rinse 1 can of black beans
- Vinaigrette (start with about 1/5 cup & add more as desired)
